  • Vanilla extract: 1 teaspoon.
  • All-purpose flour: 1 cup.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

Step 2: Blend the almond paste and sugar

  • In a stand mixer fitted with the paddle attachment, combine almond paste and sugar. Mix on medium speed until crumbly and well blended.

Step 3: Add butter and eggs

  • Add the softened butter to the almond-sugar mixture and beat until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.

Step 4: Incorporate the extracts

  • Mix in the almond and vanilla extracts until fully combined.

Step 5: Combine dry ingredients

  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.

Step 6: Pour and bake

  • Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  • Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

Step 7: Cool and serve

  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
