Instructions

  • Melt the chocolate – In a heatproof bowl, melt the chocolate and butter over a double boiler, stirring until smooth. Let it cool slightly.
  • Beat egg yolks and sugar – In a separate bowl, whisk egg yolks with half of the sugar until pale and thick. Mix in the vanilla and espresso powder.
  • Combine chocolate and yolks – Gradually add the melted chocolate to the egg yolk mixture, stirring continuously.
  • Whip egg whites – In another bowl, beat the egg whites with a pinch of salt until soft peaks form. Slowly add the remaining sugar and beat until glossy.
  • Fold in egg whites – Gently fold the whipped egg whites into the chocolate mixture, being careful not to deflate the air.
  • Whip the cream – In a clean bowl, whip the heavy cream until soft peaks form.
  • Incorporate whipped cream – Fold the whipped cream into the chocolate mixture until fully combined.
  • Chill before serving – Divide the mousse into serving glasses and refrigerate for at least 2 hours.
  • Garnish and serve – Top with whipped cream, chocolate shavings, or fresh berries before serving.
