Ingredients

For the bread:

  • All-purpose flour: 2 cups.
  • Granulated sugar: 1 cup.
  • Baking powder: 2 teaspoons.
  • Salt: 1/2 teaspoon.
  • Ground cinnamon: 1 teaspoon.
  • Eggs: 2 large.
  • Whole milk: 1/2 cup.
  • Vegetable oil: 1/2 cup.
  • Vanilla extract: 1 teaspoon.
  • Fresh or dried cranberries: 1 1/2 cups.

For the cream cheese filling:

  • Cream cheese: 8 ounces, softened.
  • Granulated sugar: 1/4 cup.
  • Egg: 1 large.
  • Vanilla extract: 1 teaspoon.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Prepare the bread batter

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, beat the eggs, milk, oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the cranberries.

Step 3: Make the cream cheese filling

  • In a medium bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.

Step 4: Assemble the bread

  • Pour half of the bread batter into the prepared loaf pan. Spread the cream cheese mixture evenly over the batter, then top with the remaining batter. Use a knife to swirl the cream cheese layer gently into the batter for a marbled effect.

Step 5: Bake the bread

  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 6: Serve and enjoy

  • Slice the bread and serve at room temperature. Store leftovers tightly wrapped to maintain freshness.
