Ina Garten Creamy Cucumber Salad

This salad is made by thinly slicing cucumbers and tossing them in a creamy dressing of sour cream, vinegar, and seasonings. Ina’s version keeps it classic with a clean, bright flavor and a silky texture that clings perfectly to the cool cucumber slices.

Ingredients

  • 4 large cucumbers, thinly sliced

  • 1 small red onion, thinly sliced

  • ¾ cup sour cream

  • 2 tablespoons white wine vinegar

  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

  • 1 teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

Instructions

Step 1: Prepare the vegetables

Peel the cucumbers (if desired) and thinly slice them into rounds. Thinly slice the red onion as well. Place both in a large bowl.

Step 2: Make the dressing

In a separate bowl, whisk together the sour cream, white wine vinegar, dill, salt, and pepper until smooth and well combined.

Step 3: Combine and toss

Pour the dressing over the cucumber and onion mixture. Toss gently until all the slices are evenly coated.

Step 4: Chill and serve

Cover the salad and refrigerate for at least 30 minutes before serving. This allows the flavors to meld and the salad to chill properly.

Step 5: Garnish if desired  

Sprinkle with extra fresh dill or a few cracks of black pepper before serving for a beautiful finish.
