Ina Garten French String Bean Salad

Ina Garten French String Bean Salad

This French String Bean Salad is a classic Barefoot Contessa recipe, featuring tender-crisp green beans (haricots verts), red onions, and toasted nuts, all tossed in a light Dijon mustard vinaigrette. It’s a delightful balance of texture and flavor, ideal for picnics, dinner parties, or weeknight meals.

Ingredients

  • Haricots verts (French string beans) – 1 pound, trimmed
  • Red onion – ½ small, thinly sliced
  • Toasted walnuts or almonds – ½ cup
  • Dijon mustard – 1 tbsp
  • White wine vinegar – 2 tbsp
  • Olive oil – 3 tbsp
  • Salt and freshly ground black pepper – to taste
  • Fresh parsley or dill – 2 tbsp, chopped (optional, for garnish)

Instructions

  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the string beans and cook for 2-3 minutes until bright green and tender-crisp. Immediately transfer to a bowl of ice water to stop cooking. Drain and pat dry.
  2. Prepare the Dressing: In a small bowl, whisk together Dijon mustard, white wine vinegar, olive oil, salt, and pepper until emulsified.
  3. Assemble the Salad: In a large mixing bowl, combine the blanched green beans, sliced red onion, and toasted nuts.
  4. Toss with Dressing: Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  5. Garnish and Serve: Sprinkle with fresh parsley or dill, if desired, and serve immediately or refrigerate until ready to eat.
