  • 1/2 cup honey
  • 1/4 cup light brown sugar, packed
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped dried fruit (raisins, cranberries, or apricots)
  • 1/4 cup mini chocolate chips (optional)

Instructions

Step 1: Preheat the Oven

  • Set the temperature: Preheat your oven to 350°F (175°C).
  • Prepare the pan: Line an 8×12-inch baking dish with parchment paper.

Step 2: Toast the Oats and Nuts

  • Spread on a baking sheet: Combine oats, almonds, and coconut.
  • Bake until golden: Toast in the oven for 8–10 minutes, stirring halfway through.

Step 3: Make the Syrup

  • Melt butter and sugar: In a saucepan, melt the honey, brown sugar, and butter over low heat.
  • Add flavoring: Stir in vanilla extract and salt, mixing well.

Step 4: Combine Ingredients

  • Mix wet and dry ingredients: In a large bowl, combine the toasted oats mixture with the syrup.
  • Fold in dried fruit: Stir in the chopped dried fruit and mini chocolate chips (if using).

Step 5: Press and Bake

  • Transfer to pan: Spread the mixture evenly into the prepared baking dish.
  • Press firmly: Use a spatula or greased hands to press down the mixture tightly.
  • Bake until golden: Bake for 20–25 minutes, until lightly golden and set.

Step 6: Cool and Cut

  • Let it rest: Allow the granola bars to cool for at least 30 minutes before cutting.
  • Slice into bars: Use a sharp knife to cut into squares or rectangles.
