Instructions

Combine ingredients

In a medium saucepan, mix steel-cut oats, water, milk, salt, and cinnamon (if using). Bring to a gentle boil over medium heat.

Boil briefly and remove from the heat

Once it begins to boil, stir well, then remove from the heat. Cover with a lid.

Let oats sit overnight

Let the covered saucepan sit at room temperature overnight (or up to 12 hours). The oats will absorb the liquid and soften.

Reheat in the morning
