Ina Garten Popovers Recipe

Ina Garten Popovers

Popovers are hollow, puffed pastries made from a simple egg-based batter. Unlike traditional bread, popovers rise dramatically in the oven, creating a crisp outer shell with a soft, custardy interior. Ina Garten’s version ensures a perfect balance of crispness and tenderness, making them a delightful alternative to dinner rolls.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon kosher salt
  • 3 large eggs, room temperature
  • 1 1/2 cups whole milk, room temperature
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon vanilla extract (optional, for a slightly sweet touch)
  • 1 tablespoon unsalted butter (for greasing the pan)

Instructions

Step 1: Preheat the Oven

  • Set the temperature: Preheat your oven to 425°F (220°C).
  • Prepare the popover pan: Grease a popover pan or muffin tin with melted butter.

Step 2: Make the Batter

  • Whisk the eggs and milk: In a large mixing bowl, whisk together the eggs and room-temperature milk until well combined.
  • Add the dry ingredients: Slowly whisk in the flour and salt until smooth and free of lumps.
  • Incorporate melted butter: Stir in the melted butter and vanilla extract (if using).

Step 3: Fill the Popover Pan

  • Pour the batter: Evenly divide the batter into the prepared pan, filling each cup about 2/3 full.

Step 4: Bake the Popovers

  • Initial high heat: Bake at 425°F for 20 minutes without opening the oven.
  • Reduce temperature: Lower the oven to 350°F (175°C) and bake for another 15 minutes until golden brown and puffed.

Step 5: Serve

  • Cool slightly: Let the popovers rest for 5 minutes.
  • Serve warm: Enjoy with butter, jam, or a savory spread.
