Ina Garten Quinoa Salad is a refreshing and colorful dish made with quinoa, fresh herbs, crisp vegetables, and a tangy lemon-based dressing. It’s a light yet satisfying option that pairs well with grilled meats, and roasted vegetables, or can even be enjoyed on its own.

Ingredients

  • Quinoa: 1 cup, rinsed and cooked according to package instructions.
  • Cucumber: 1 medium, diced.
  • Cherry tomatoes: 1 cup, halved.
  • Red bell pepper: 1, finely chopped.
  • Red onion: 1 small, finely diced.
  • Fresh parsley: 1/4 cup, chopped.
  • Fresh mint: 1/4 cup, chopped.
  • Feta cheese: 1/2 cup, crumbled (optional).

For the Dressing:

 

  • Lemon juice: 3 tablespoons, freshly squeezed.
  • Olive oil: 1/4 cup.
  • Garlic: 1 clove, minced.
  • Salt and pepper: To taste.

Instructions

Prepare the Quinoa:

  • Cook quinoa according to package instructions. Once cooked, fluff with a fork and let it cool to room temperature.

Chop the Vegetables:

  • Dice the cucumber, cherry tomatoes, red bell pepper, and red onion into bite-sized pieces.

Make the Dressing:

  • In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper. Adjust seasoning to taste.

Assemble the Salad:

  • In a large mixing bowl, combine the cooled quinoa, chopped vegetables, parsley, and mint.
  • Pour the dressing over the salad and toss gently to combine.
