Ina Garten Sausage and Peppers

Sausage and Peppers is a comforting dish made with pan-seared sausage, sautéed bell peppers, onions, and a rich tomato sauce. It’s a versatile recipe that can be served on its own, over pasta, or in sandwiches for a complete meal.

Ingredients

  • Italian sausage – 2 pounds (sweet or spicy, as preferred)
  • Olive oil – 2 tablespoons
  • Red bell peppers – 2, sliced
  • Green bell peppers – 2, sliced
  • Yellow onion – 2 large, sliced
  • Garlic – 3 cloves, minced
  • Canned crushed tomatoes – 1 (28-ounce) can
  • Tomato paste – 2 tablespoons
  • Red wine vinegar – 2 tablespoons
  • Dried oregano – 1 teaspoon
  • Kosher salt – 1 teaspoon (or to taste)
  • Black pepper – ½ teaspoon
  • Fresh basil – 2 tablespoons, chopped (for garnish)

Instructions

Brown the Sausage

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the sausages and cook until browned on all sides, about 5-7 minutes. Remove and set aside.

Sauté the Vegetables

  • In the same skillet, add the remaining olive oil.
  • Add the sliced bell peppers and onions and sauté for 7-10 minutes, stirring occasionally, until softened.
  • Stir in the minced garlic and cook for 1 minute until fragrant.

Add the Tomato Sauce

  • Stir in the crushed tomatoes, tomato paste, red wine vinegar, dried oregano, salt, and black pepper.
  • Bring the sauce to a simmer and cook for 5 minutes, stirring occasionally.

Cook the Sausage and Peppers Together

  • Return the browned sausages to the skillet, nestling them into the sauce.
  • Cover the skillet and simmer for 20-25 minutes, until the sausages are cooked through and the flavors meld.

Garnish and Serve

  • Sprinkle the dish with fresh basil before serving. Serve warm on its own, over pasta, or in sandwich rolls.
