Ina Garten Tomato Gratin Recipe

Ina Garten Tomato Gratin

Tomato Gratin is a baked dish featuring layers of fresh tomatoes, herbed breadcrumbs, and a touch of Parmesan cheese. The gratin is baked until bubbly and golden, creating a dish that’s bursting with fresh, summery flavors while maintaining a satisfying crunch on top.

Ingredients

  • Ripe tomatoes – 2 pounds, sliced ¼-inch thick
  • Fresh breadcrumbs – 1 ½ cups (use crusty bread for the best texture)
  • Parmesan cheese – ½ cup, grated
  • Garlic – 2 cloves, minced
  • Fresh parsley – 2 tbsp, finely chopped
  • Fresh thyme – 1 tsp, chopped
  • Olive oil – 3 tbsp
  • Salt and freshly ground black pepper – to taste

Instructions

  1. Preheat the Oven: Set the oven to 400°F (200°C). Grease a shallow baking dish with a drizzle of olive oil.
  2. Prepare the Tomatoes: Arrange the tomato slices in the baking dish, slightly overlapping them in rows or a circular pattern. Season lightly with salt and pepper.
  3. Make the Breadcrumb Topping: In a medium bowl, mix the breadcrumbs, Parmesan cheese, minced garlic, parsley, thyme, and olive oil. Stir until the breadcrumbs are evenly coated and slightly moist.
  4. Assemble the Gratin: Sprinkle the breadcrumb mixture evenly over the tomatoes, ensuring the entire surface is covered.
  5. Bake the Dish: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the tomatoes are bubbling underneath.
  6. Let It Rest: Remove from the oven and allow the gratin to rest for 5 minutes before serving to set the layers.
