¼ cup good olive oil

Whisk ingredients together – In a small bowl, combine champagne vinegar, mustard, minced garlic, salt, and pepper. Slowly whisk in olive oil until emulsified.
Layer tomatoes on a platter – Spread the sliced tomatoes in a single layer on a serving platter. Sprinkle with salt and pepper.
Tear and place burrata – Gently tear the burrata into halves or quarters and place over the tomatoes.
Add vinaigrette – Spoon the vinaigrette evenly over the tomatoes and burrata.
