Cranberry Brie Bites

Cranberry Brie Bites - recipe card

Buttery, flaky phyllo cups filled with creamy, melted Brie and topped with sweet-tart cranberry sauce and a hint of fresh rosemary. These bite-sized appetizers are elegant yet easy, perfect for holiday parties or any gathering.

Ingredients

Scale
  • 1 (8-ounce) wheel Brie cheese, rind removed (or 1 (4.4-ounce) package mini Brie bites)
  • 2 (1.9-ounce) boxes frozen phyllo cups (30 cups total)
  • 1/2 cup whole-berry cranberry sauce (homemade or store-bought)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons chopped toasted pecans (optional, for garnish)

Instructions

  1. Preheat oven to 375°F / 190°C. Line a baking sheet with parchment paper. Arrange the phyllo cups on the prepared baking sheet, spacing them about 1 inch apart. (If using frozen phyllo cups, no need to thaw; they will thaw in the oven.)
  2. Remove the rind from the Brie cheese (if using a wheel). Cut the Brie into 30 small pieces, about 1/2-inch cubes. (If using mini Brie bites, cut each in half crosswise.)
  3. Place one piece of Brie into each phyllo cup. Do not overfill; the cheese should sit about halfway up the cup.
  4. Top each Brie piece with a small dollop of cranberry sauce, about 1/2 teaspoon. Sprinkle a pinch of chopped rosemary over the cranberry sauce. Lightly season each bite with a tiny pinch of kosher salt and black pepper.
  5. Bake for 10-12 minutes, or until the phyllo cups are golden brown and crisp and the Brie is melted and bubbly. Watch carefully during the last few minutes to prevent burning.
  6. Remove from the oven and let cool on the baking sheet for 2-3 minutes before serving. The filling will be very hot.
  7. Transfer to a serving platter and garnish with toasted pecans, if desired. Serve warm.

Notes

Storage: Store leftover bites in an airtight container in the refrigerator for up to 3 days. Freezing: Not recommended; phyllo cups lose their crispness. Reheating: Reheat in a 350°F / 177°C oven for 5-7 minutes, or until warmed through and crisp again. Avoid microwaving, as it will make the phyllo soggy. Make-ahead: Assemble the bites up to 4 hours ahead and refrigerate; bake just before serving.
