Ina Garten’s Apple Clafoutis is a baked dessert featuring caramelized apple slices layered in a creamy batter that’s slightly sweet and custard-like. Similar to a pancake or flan, it’s traditionally baked in a skillet or dish and served warm.

Ingredients

  • Apples: 2 large, peeled, cored, and thinly sliced (such as Granny Smith or Honeycrisp).
  • Unsalted butter: 2 tablespoons.
  • Granulated sugar: 1/3 cup, divided.
  • Eggs: 3 large.
  • Whole milk: 1 cup.
  • Heavy cream: 1/4 cup.
  • Vanilla extract: 1 teaspoon.
  • All-purpose flour: 1/2 cup.
  • Salt: 1/4 teaspoon.
  • Ground cinnamon: 1/2 teaspoon.
  • Powdered sugar: For dusting.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or ovenproof skillet with butter.

Step 2: Caramelize the apples

  • Heat a large skillet over medium heat and melt the butter. Add the apple slices and sprinkle with 2 tablespoons of granulated sugar and the cinnamon.
  • Sauté for 5–7 minutes until the apples are tender and slightly caramelized. Remove from heat and let cool slightly.

Step 3: Prepare the batter

  • In a mixing bowl, whisk the eggs until frothy. Add the milk, heavy cream, vanilla extract, the remaining sugar, flour, and salt. Whisk until the batter is smooth and well combined.

Step 4: Assemble the clafoutis

  • Arrange the caramelized apple slices evenly in the prepared baking dish. Pour the batter over the apples, ensuring they are evenly covered.

Step 5: Bake the clafoutis

  • Place the dish in the oven and bake for 35–40 minutes, or until the clafoutis is puffed and golden brown. The center should be set but slightly custard-like.

Step 6: Cool and serve

  • Remove from the oven and let cool for 5–10 minutes. Dust with powdered sugar before serving. Enjoy warm or at room temperature.
