Carrot Ginger Soup is a smooth and creamy soup made from fresh carrots, aromatic ginger, and a simple vegetable or chicken stock base. Ina Garten’s version highlights the carrots’ natural sweetness, balanced by the subtle spice of ginger and a touch of orange for brightness.

Ingredients

  • Carrots – 2 pounds, peeled and chopped
  • Yellow onion – 1 medium, diced
  • Fresh ginger – 1 tbsp, grated
  • Olive oil – 2 tbsp
  • Chicken or vegetable stock – 6 cups
  • Orange juice – ½ cup, freshly squeezed
  • Salt and freshly ground black pepper – to taste
  • Crème fraîche or Greek yogurt – 2 tbsp (optional, for garnish)
  • Fresh parsley or chives – for garnish (optional)

Instructions

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes, or until softened and translucent. Stir in the grated ginger and cook for another minute.
  2. Add Carrots and Stock: Add the chopped carrots to the pot and pour in the chicken or vegetable stock. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the carrots are very tender.
  3. Blend Until Smooth: Remove the pot from heat. Use an immersion blender to puree the soup until smooth and creamy. Alternatively, transfer the soup to a blender in batches and blend carefully.
  4. Add Orange Juice: Stir in the freshly squeezed orange juice and season with salt and pepper to taste. Heat gently for a few minutes, but do not boil.
  5. Garnish and Serve: Ladle the soup into bowls and top with a dollop of crème fraîche or Greek yogurt if desired. Garnish with fresh parsley or chives for a burst of color and flavor.
