Ina Garten Cheddar and Scallion Creamed Corn

Ina Garten Cheddar and Scallion Creamed Corn - recipe card

Sweet summer corn kernels simmered in a rich, creamy sauce with sharp cheddar and fresh scallions. The result is a luscious, cheesy side dish with a hint of onion that pairs beautifully with grilled meats or roasted chicken.

Ingredients

Scale
  • 4 cups fresh corn kernels (from about 4 large ears) or frozen corn, thawed
  • 2 tablespoons unsalted butter
  • 1/2 cup finely chopped scallions (white and light green parts; reserve dark green tops for garnish)
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon freshly grated nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese (about 6 oz)
  • 2 tablespoons chopped fresh chives or scallion greens, for garnish

Instructions

  1. If using fresh corn, cut the kernels from the cobs and set aside. If using frozen corn, thaw and drain well.
  2. In a large skillet or saucepan, melt the butter over medium heat until it foams. Add the chopped scallions and cook, stirring, until softened, about 2 minutes.
  3. Sprinkle the flour over the scallions and cook, stirring constantly, for 1 minute to remove the raw flour taste.
  4. Gradually whisk in the milk and cream. Cook, whisking constantly, until the mixture thickens and bubbles, about 3-4 minutes.
  5. Stir in the corn, salt, pepper, and nutmeg. Cook, stirring occasionally, until the corn is tender and heated through, about 5-7 minutes for fresh or 3-4 minutes for frozen.
  6. Reduce the heat to low and add the shredded cheddar cheese. Stir until the cheese is completely melted and the mixture is smooth.
  7. Taste and adjust seasoning with additional salt and pepper if needed.
  8. Transfer to a serving dish and garnish with chopped chives or scallion greens. Serve hot.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as the sauce may separate. Reheating: Reheat gently on the stovetop over low heat, stirring frequently, or in the microwave in 30-second intervals, stirring between each, until heated through. Add a splash of milk if the mixture seems thick.
