Chicken Satay is a popular Southeast Asian dish that consists of marinated, skewered, and grilled chicken. Ina Garten’s version elevates the classic with a well-balanced marinade and a creamy peanut dipping sauce. It’s savory, slightly sweet, and has just the right amount of spice.

Ingredients

For the Chicken and Marinade:

  • Chicken breasts: 4 boneless, skinless, cut into thin strips.
  • Soy sauce: 1/4 cup.
  • Lime juice: 2 tablespoons, freshly squeezed.
  • Garlic: 2 cloves, minced.
  • Ginger: 1 tablespoon, grated.
  • Curry powder: 2 teaspoons.
  • Honey: 1 tablespoon.
  • Vegetable oil: 2 tablespoons.
  • Salt and pepper: To taste.

For the Peanut Dipping Sauce:

  • Peanut butter: 1/2 cup, creamy.
  • Soy sauce: 2 tablespoons.
  • Lime juice: 2 tablespoons, freshly squeezed.
  • Honey: 1 tablespoon.
  • Sriracha: 1 teaspoon (optional, for heat).
  • Coconut milk or water: 1/4 cup, to thin the sauce.

Instructions

Step 1: Marinate the Chicken

  • In a mixing bowl, whisk together soy sauce, lime juice, minced garlic, grated ginger, curry powder, honey, vegetable oil, salt, and pepper.
  • Add the chicken strips to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

Step 2: Prepare the Peanut Dipping Sauce

  • In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, and Sriracha (if using).
  • Gradually add coconut milk or water, whisking until the sauce reaches your desired consistency. Set aside.

Step 3: Skewer and Grill the Chicken

  • Soak wooden skewers in water for 20 minutes to prevent burning.
  • Thread the marinated chicken strips onto the skewers.
  • Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
  • Grill the chicken skewers for 2-3 minutes per side, or until cooked through and slightly charred.
