  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 1/2 pounds ground beef (85% lean)
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 (28-ounce) can crushed tomatoes
  • 1 (6-ounce) can tomato paste
  • 1/2 cup water
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup fresh basil, chopped

For the cheese filling:

  • 15 ounces whole-milk ricotta
  • 1 large egg
  • 1/2 cup freshly grated parmesan
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon kosher salt

For assembly:

  • 12 lasagna noodles
  • 1 tablespoon kosher salt, for the pasta water

  3. Meanwhile, cook the noodles in a large pot of boiling salted water until just tender, then drain and lay them flat on an oiled sheet pan. Mix the ricotta, egg, parmesan, parsley and salt in a bowl.
  4. Preheat the oven to 375°F (190°C). Spread 1 cup of the sauce in a 9-by-13-inch baking dish. Layer 4 noodles, one-third of the ricotta mixture, one-third of the remaining sauce and 1 1/3 cups of the mozzarella. Repeat twice more, then sprinkle with the parmesan. The lasagna can be covered and refrigerated for up to 1 day or frozen for up to 3 months.
  5. Cover with tented foil and bake for 30 minutes. Uncover and bake for 20 to 25 minutes more, until bubbling and golden and the center registers 165°F (74°C) on a food thermometer.
  6. Let rest for 15 minutes before slicing.

Instructions

  1. Simmer the wild rice in the water with a pinch of salt, covered, for 45 to 50 minutes, until tender. Drain any excess liquid.
