  1. Preheat the oven to 425°F (220°C). Remove the giblets and pat the chicken very dry inside and out.

  5. Cover and braise in the oven for 2 1/2 to 3 hours, until the meat is fork-tender and falling off the bone, well past 145°F (63°C).
  6. Transfer the ribs to a platter. Skim the fat from the sauce, discard the thyme and bay leaves and simmer the sauce on the stovetop for 10 minutes to thicken. Return the ribs to the sauce, garnish with parsley and serve over mashed potatoes or polenta. To make ahead, refrigerate the ribs in the sauce overnight, lift off the solidified fat and reheat in a 325°F (165°C) oven until hot throughout.

  4. Meanwhile, preheat the oven to 375°F (190°C). Cook the rigatoni in a large pot of boiling salted water for 2 minutes less than the package directions, then drain.
  5. Toss the pasta with the ragù and spread in a 9-by-13-inch baking dish. Dollop with the ricotta and sprinkle with the mozzarella and parmesan. The dish can be covered and refrigerated for up to 1 day; add about 15 minutes to the baking time if it goes into the oven cold.
  6. Bake for 25 to 30 minutes, until bubbling and golden on top. Garnish with basil and serve.

Chicken sausages roast on one pan with butternut squash, Brussels sprouts, red onion and apples for a hands-off dinner that’s colorful and full of flavor. Prep takes about fifteen minutes, and the oven does the rest.

  • 1 1/4 pounds fully cooked chicken sausages (about 6 links)
  • 3 cups butternut squash cubes (1-inch)
  • 12 ounces Brussels sprouts, trimmed and halved
  • 1 red onion, cut into wedges
  • 2 crisp apples, cored and cut into wedges
  • 3 tablespoons olive oil
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh thyme leaves, divided

Instructions

  1. Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
  2. Toss the squash, Brussels sprouts and red onion with the olive oil, maple syrup, salt, pepper and half the thyme on the baking sheet. Spread in a single layer and roast for 15 minutes.
  3. Add the apples and sausages to the pan, nestling them among the vegetables. Roast for 18 to 22 minutes more, turning the sausages once, until the vegetables are tender and caramelized and the sausages are browned and register 165°F (74°C) on a food thermometer.
  4. Sprinkle with the remaining thyme and serve hot.

14. Chicken Chili

Roasted chicken breasts, sweet peppers, tomatoes, white beans and warm spices simmer into a hearty chili with plenty of texture. Serve it with all the toppings and let everyone build their own bowl.

Ingredients

  • 3 bone-in, skin-on chicken breasts (about 3 pounds)
  • 1/4 cup plus 1 tablespoon olive oil, divided
  • 2 teaspoons kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper
  • 2 yellow onions, chopped
  • 4 garlic cloves, minced
  • 2 red bell peppers, diced
  • 1 yellow bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2 (28-ounce) cans crushed tomatoes
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1/4 cup fresh basil, chopped
  • Sour cream, grated cheddar, chopped scallions and tortilla chips, for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Rub the chicken with 1 tablespoon of the olive oil, season with 1 teaspoon of the salt and the pepper and roast on a baking sheet for 35 to 40 minutes, until it registers 165°F (74°C) on a food thermometer. Cool, then discard the skin and bones and cut the meat into bite-size chunks.
  2. Meanwhile, heat the remaining 1/4 cup olive oil in a large Dutch oven over medium heat. Add the onions and cook for 10 minutes, until translucent. Add the garlic and cook for 1 minute.
  3. Add the bell peppers, jalapeño, chili powder, cumin, cayenne and remaining 1 teaspoon salt and cook for 1 minute.
  4. Stir in the tomatoes, bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally.
  5. Add the chicken, beans and basil and simmer for 10 minutes more, until heated through. Taste and adjust the seasoning.
  6. Serve hot with sour cream, cheddar, scallions and tortilla chips. The chili can be refrigerated for up to 4 days or frozen for up to 3 months.

15. Pan-Seared Steak with Mushrooms

A thick strip steak seared in a hot cast-iron pan and finished with garlicky sautéed mushrooms makes a special dinner in about thirty-five minutes. It’s just as fitting for a quiet weeknight as it is for a dinner with friends.

Ingredients

  • 2 (1 1/4-inch-thick) boneless strip steaks (about 12 ounces each)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 4 tablespoons unsalted butter, divided
  • 1 pound cremini mushrooms, sliced
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves
  • 1/3 cup beef broth
  • 2 tablespoons heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat the steaks dry and season all over with the salt and pepper.
  2. Heat a large cast-iron skillet over high heat until very hot. Add the oil, then the steaks, and sear for 4 to 5 minutes per side, until deeply browned and the center registers 145°F (63°C) on a food thermometer. During the last minute, add 1 tablespoon of the butter and spoon it over the steaks.
  3. Transfer the steaks to a cutting board and let rest for 5 to 10 minutes.
  4. Reduce the heat to medium and add the remaining 3 tablespoons butter to the skillet. Add the mushrooms and cook for 8 minutes, until browned. Add the shallot, garlic and thyme and cook for 2 minutes.
  5. Add the broth and cream and simmer for 2 minutes, scraping up the browned bits, until slightly thickened. Stir in the parsley and any resting juices from the steaks.
  6. Slice the steaks against the grain and serve topped with the mushrooms.
