Ingredients

Scale
  • 1/4 pound (1 stick) unsalted butter, softened
  • 1 1/2 cups granulated sugar, divided
  • 2 large eggs, at room temperature
  • 1 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 34 fresh peaches, peeled, pitted, and sliced

Instructions

  • Preheat the oven and prepare the pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round springform pan.
  • Cream butter and sugar: In a large mixing bowl, beat the butter and 1 cup of sugar until light and fluffy.
  • Add wet ingredients: Mix in the eggs one at a time, followed by the sour cream and vanilla extract.
  • Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  • Prepare the peaches: Toss the peach slices with the remaining 1/2 cup of sugar, cinnamon, and nutmeg.
  • Assemble the cake: Spread half the batter into the prepared pan, layer half the peach slices over the batter, and then spread the remaining batter on top. Arrange the remaining peaches in a decorative pattern on top.
  • Bake the cake: Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and serve: Allow the cake to cool in the pan for 10 minutes, then remove the sides of the springform pan. Serve warm or at room temperature.
