Ingredients

  • Lamb sausage: 1 pound (uncased or sausage links with casings removed).
  • Puff pastry: 1 sheet, thawed.
  • Dijon mustard: 2 tablespoons.
  • Egg: 1 large, beaten (for egg wash).
  • Fresh herbs: 1 tablespoon, chopped (parsley, thyme, or rosemary).
  • Salt and pepper: To taste.
  • Optional garnish: Sesame seeds or poppy seeds.

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2: Prepare the lamb sausage filling

  • If using sausage links, remove the casings.
  • In a bowl, combine the lamb sausage, fresh herbs, and a pinch of salt and pepper. Mix until well combined.

Step 3: Roll out the puff pastry

  • On a lightly floured surface, roll out the puff pastry sheet to smooth any creases.
  • Spread a thin layer of Dijon mustard over the pastry, leaving a 1-inch border around the edges.

Step 4: Assemble the pastry

  • Place the lamb sausage mixture in a log shape down the center of the puff pastry.
  • Fold one side of the pastry over the sausage, then fold the other side to overlap, creating a tight seal. Pinch the edges to seal completely.

Step 5: Brush with egg wash

  • Place the assembled pastry seam-side down on the prepared baking sheet.
  • Brush the top and sides with beaten egg. For extra texture, sprinkle sesame seeds or poppy seeds on top.

Step 6: Bake the pastry

  • Bake for 25–30 minutes, or until the pastry is golden brown and puffed. The internal temperature of the sausage should reach 160°F (71°C).

Step 7: Cool and slice
