These colorful mini frittatas are packed with red bell pepper, spinach and sharp cheddar, and they bake in a muffin tin in under twenty minutes. Make them a couple of days ahead and reheat for an easy bite that works at a holiday brunch or an evening party.

Ingredients
- 1 tablespoon olive oil, plus more for the pan
- 1 small red bell pepper, finely diced
- 4 scallions, thinly sliced
- 2 cups baby spinach, chopped
- 8 large eggs
- 1/2 cup whole milk
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup grated sharp white cheddar (about 4 ounces)
- 2 tablespoons fresh basil, chopped
Instructions
- Preheat the oven to 350°F (175°C) and generously oil a 24-cup mini muffin pan.
- Heat the olive oil in a medium skillet over medium heat. Add the bell pepper and cook for 4 to 5 minutes, until tender. Add the scallions and spinach and cook for 1 minute, until wilted. Cool slightly.
- Whisk the eggs, milk, salt and pepper in a large bowl. Stir in the vegetables, cheddar and basil.
- Divide the mixture evenly among the muffin cups, filling them almost to the top.
- Bake for 15 to 18 minutes, until puffed and set in the center and a food thermometer registers 160°F (71°C). Cool in the pan for 5 minutes, then run a knife around the edges and lift them out.
- Serve warm. To make ahead, cool completely and refrigerate for up to 2 days or freeze for up to 1 month; reheat in a 350°F (175°C) oven for 8 to 10 minutes.
