1. Braised Short Ribs

Braised short ribs in tomato sauce in a Dutch oven with parsley

Bone-in short ribs braised slowly in beef broth with tomatoes, carrots, onion and thyme turn meltingly tender and deeply savory. Like most braises, they’re even better made a day or two ahead, and chilling them makes it easy to lift off the fat.

Servings: 6

Total time: 4 hours

Ingredients

  • 5 pounds bone-in beef short ribs, cut into 3-inch pieces
  • 2 teaspoons kosher salt, plus more to taste
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • 2 large yellow onions, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can whole peeled tomatoes, crushed by hand, with their juices
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 6 sprigs fresh thyme
  • 2 bay leaves
  • 2 tablespoons chopped fresh flat-leaf parsley

Instructions

  1. Preheat the oven to 325°F (165°C). Pat the short ribs dry, season all over with the salt and pepper and dust lightly with the flour.
  2. Heat the olive oil in a large Dutch oven over medium-high heat. Brown the ribs in batches for 8 to 10 minutes per batch, until well browned on all sides, and transfer to a plate.
  3. Pour off all but 2 tablespoons of the fat. Add the onions, carrots and celery and cook over medium heat for 10 minutes, until softened. Add the garlic and tomato paste and cook for 2 minutes.
  4. Add the tomatoes, broth, Worcestershire sauce, vinegar, thyme and bay leaves, scraping up the browned bits, and bring to a simmer. Return the ribs and any juices to the pot, nestling them into the liquid.
  5. Cover and braise in the oven for 2 1/2 to 3 hours, until the meat is fork-tender and pulling away from the bone.
  6. To make ahead, cool, then refrigerate in the pot for up to 2 days. Lift off the solidified fat, then reheat covered at 325°F (165°C) for about 1 hour, or gently on the stovetop, until the ribs are hot through and the sauce is simmering.
  7. Discard the thyme and bay leaves, simmer the sauce to thicken if needed, sprinkle with parsley and serve with mashed potatoes or polenta.

2. Chicken Pot Pie

Chicken pot pies with golden crusts, one showing creamy chicken and vegetable filling

Chunks of roast chicken, carrots, peas and pearl onions in a creamy sauce under a flaky homemade crust make the ultimate comforting main course. Assemble the pies a day ahead, then brush with egg wash and bake as guests arrive.

Servings: 6

Total time: 2 hours 45 minutes

Ingredients

For the filling:

  • 3 bone-in, skin-on chicken breasts (about 3 pounds)
  • Olive oil
  • Kosher salt and freshly ground black pepper
  • 5 cups chicken stock
  • 12 tablespoons (1 1/2 sticks) unsalted butter
  • 2 cups chopped yellow onions
  • 3/4 cup all-purpose flour
  • 1/4 cup heavy cream
  • 1 1/2 cups diced carrots, blanched for 2 minutes
  • 1 cup frozen peas
  • 1 1/2 cups frozen pearl onions
  • 1/2 cup chopped fresh flat-leaf parsley

For the crust:

  • 3 cups all-purpose flour, plus more for rolling
  • 1 1/2 teaspoons kosher salt
  • 2 teaspoons baking powder
  • 12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
  • 1/2 to 2/3 cup ice water
  • 1 large egg beaten with 1 tablespoon water
  • Flaky sea salt and cracked black pepper

Instructions

  1. Preheat the oven to 350°F (175°C). Rub the chicken with olive oil, season with salt and pepper and roast on a sheet pan for 35 to 40 minutes, until it reaches 165°F (74°C). Cool, then discard the skin and bones and cut the meat into large dice.
  2. Heat the stock. In a large pot, melt the butter over medium-low heat and cook the onions for 10 to 15 minutes, until translucent. Add the flour and cook, stirring, for 2 minutes. Whisk in the hot stock and simmer for 1 minute, until thick. Stir in the cream, 2 teaspoons salt and 1/2 teaspoon pepper.
  3. Add the chicken, carrots, peas, pearl onions and parsley, taste for seasoning and let the filling cool.
  4. For the crust, pulse the flour, salt and baking powder in a food processor. Add the butter and pulse until the pieces are pea-sized. With the machine running, add just enough ice water for the dough to come together. Shape into a disk, wrap and chill for 30 minutes.
  5. Divide the cooled filling among 6 ovenproof bowls or one 3-quart baking dish. Roll the dough 1/8 inch thick and cut rounds about 1 inch larger than the bowls. Lay over the filling and crimp the edges. To make ahead, cover and refrigerate for up to 1 day.
  6. Preheat the oven to 375°F (190°C). Brush the crusts with egg wash, sprinkle with flaky salt and pepper and cut a small slit in each.
  7. Bake on a sheet pan for 45 to 55 minutes (about 1 hour straight from the fridge), until the crust is golden, the filling is bubbling and the center reaches 165°F (74°C).
