Ina Garten make ahead Green Beans

Ina Garten make ahead Green Beans - recipe card

Tender-crisp green beans blanched to vibrant perfection, tossed with browned shallots, garlic, and a bright lemon-Dijon vinaigrette. This dish is designed to be made a day ahead, allowing the flavors to meld beautifully while you simply reheat and serve.

Ingredients

Scale
  • 1 lb fresh green beans, ends trimmed
  • 1 tbsp kosher salt, for blanching water
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/4 cup shallots, finely minced
  • 2 cloves garlic, finely minced
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest, finely grated
  • 1 tbsp fresh flat-leaf parsley, finely chopped
  • 1 tbsp toasted sliced almonds, for garnish

Instructions

  1. Fill a large pot with 4 quarts of water and add 1 tablespoon of kosher salt. Bring to a rolling boil over high heat — the water should be aggressively bubbling, which ensures the green beans cook quickly and evenly.
  2. While the water comes to a boil, prepare an ice bath by filling a large bowl halfway with ice cubes and cold water. Having this ready before the beans go into the pot is critical — it stops the cooking instantly and locks in the vibrant green color.
  3. Add the trimmed green beans to the boiling water and cook for 3 to 4 minutes, until they turn bright green and are just tender but still have a slight crisp bite. Do not overcook — the beans should snap rather than bend limply when you test one.
  4. Using a slotted spoon or spider strainer, immediately transfer the blanched green beans to the ice bath. Let them sit for 2 to 3 minutes until completely cold to the touch, which halts carryover cooking and preserves texture.
  5. Drain the green beans thoroughly and pat them completely dry with clean kitchen towels or paper towels. Excess water will dilute the dressing and make the final dish watery, so take time with this step.
  6. In a large skillet over medium heat, melt the butter together with the olive oil. Watch carefully — the butter will foam, then the foam will subside; when you see the milk solids turn golden brown and smell a nutty aroma, about 2 to 3 minutes, it is ready.
  7. Add the minced shallots to the browned butter and cook over medium heat for 2 to 3 minutes, stirring frequently, until they turn translucent and soft with lightly golden edges. Add the minced garlic and cook for 30 to 45 seconds more, just until fragrant — do not let the garlic brown or it will turn bitter.
  8. Remove the skillet from the heat and whisk in the Dijon mustard, fresh lemon juice, lemon zest, kosher salt, and black pepper. The mustard emulsifies the butter and lemon juice into a silky, cohesive sauce that clings to each green bean.
  9. Add the dried blanched green beans to the skillet and toss gently with tongs or a spatula, coating every bean evenly in the warm vinaigrette. The residual heat of the pan will gently warm the beans without further cooking them.
  10. Transfer the dressed green beans to a serving dish or storage container. Cover tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight — the resting time allows the vinaigrette to penetrate the beans for deeper flavor.
  11. When ready to serve, if you prefer them warm, pour the green beans with all their dressing into a skillet and reheat over medium-low heat for 3 to 4 minutes, tossing gently, just until warmed through. Do not boil or overheat, as this can cause the beans to yellow and wilt.
  12. Transfer the green beans to a serving platter, sprinkle with the chopped parsley and toasted sliced almonds, and finish with an extra crack of black pepper. Serve immediately while the colors are bright and the beans glisten with the lemon-mustard dressing.

Notes

Store in an airtight container in the refrigerator for up to 4 days. The green beans can be made fully ahead and refrigerated undressed for up to 2 days — toss with the vinaigrette 4 hours before serving for optimal flavor. To freeze, blanch and shock the beans, pat them dry, then freeze in a single layer on a sheet pan before transferring to a zip-top bag for up to 3 months. Thaw in the refrigerator and dress as directed. To reheat, warm gently in a skillet over medium-low heat for 3 to 4 minutes, or microwave in 30-second intervals until warmed through.
