Ina Garten Mashed Sweet Potatoes

Ina Garten Mashed Sweet Potatoes - recipe card

These mashed sweet potatoes are velvety smooth with a rich, buttery sweetness and a hint of warm spice. Roasting the potatoes first concentrates their natural sugars and keeps the mash from turning watery, while a touch of maple syrup and cinnamon deepens the flavor. This is the perfect elegant side dish for holiday tables or cozy weeknight dinners.

Ingredients

Scale
  • 2 pounds sweet potatoes (about 2 large), peeled and cut into 1-inch chunks
  • 2 tablespoons unsalted butter, plus more for serving
  • 1/4 cup whole milk, warmed
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F / 204°C. Line a rimmed sheet pan with parchment paper or aluminum foil for easy cleanup.
  2. In a large bowl, toss the sweet potato chunks with 1 tablespoon of the unsalted butter, melted, and 1/2 teaspoon of the kosher salt until evenly coated. Spread them in a single layer on the prepared sheet pan, ensuring they are not crowded; use two pans if necessary.
  3. Roast for 35 to 45 minutes, flipping halfway through with a spatula, until the sweet potatoes are very tender and a knife slides in without resistance. The edges should be lightly caramelized and the centers soft. Remove from the oven and let cool for 5 minutes.
  4. While the potatoes roast, warm the whole milk in a small saucepan over low heat until it steams gently. Do not boil. Set aside. This prevents the mash from cooling down too much when added.
  5. Transfer the roasted sweet potatoes to a large bowl or the bowl of a stand mixer fitted with the paddle attachment. Add the remaining 1 tablespoon of butter, the warmed milk, maple syrup, cinnamon, nutmeg, remaining 1/2 teaspoon salt, and black pepper.
  6. Mash with a potato masher or beat on low speed until smooth and creamy, about 1 to 2 minutes. For an ultra-silky texture, pass the mixture through a ricer or food mill instead of mashing. Avoid overmixing, which can make the potatoes gluey.
  7. Taste and adjust seasoning, adding more salt or maple syrup if desired. The potatoes should be sweet but balanced.
  8. Transfer to a serving bowl, dot with additional butter if desired, and serve hot. Garnish with a sprinkle of cinnamon or nutmeg, if you like.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Freezing is not recommended as the texture becomes watery upon thawing. Reheating: Reheat gently in a saucepan over low heat with a splash of milk or in the microwave in 30-second intervals, stirring until hot. Do not overheat or the potatoes may dry out.
