Ingredients

  • All-purpose flour: 2 cups.
  • Granulated sugar: 1 cup.
  • Brown sugar: 1/4 cup, packed.
  • Baking soda: 2 teaspoons.
  • Ground cinnamon: 2 teaspoons.
  • Salt: 1/2 teaspoon.
  • Vegetable oil: 1 cup.
  • Eggs: 3 large.
  • Vanilla extract: 1 teaspoon.
  • Grated carrots: 2 cups, packed.
  • Grated apple: 1 large, peeled and cored.
  • Shredded coconut: 1/2 cup.
  • Chopped walnuts or pecans: 1/2 cup.
  • Raisins or dried cranberries: 1/2 cup (optional).

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups well.

Step 2: Mix the dry ingredients

  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.

Step 3: Combine wet ingredients

  • In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.

Step 4: Mix the batter

  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

Step 5: Fold in the mix-ins

  • Gently fold in the grated carrots, grated apple, shredded coconut, chopped nuts, and raisins (if using).

Step 6: Fill the muffin tin
