Ina Garten Parmesan Mashed Potatoes

Ina Garten Parmesan Mashed Potatoes - recipe card

These Parmesan mashed potatoes are luxuriously creamy and fluffy, with a rich, nutty flavor from freshly grated Parmesan and a hint of garlic. They strike the perfect balance between comfort and elegance, making them an ideal side for any occasion.

Ingredients

Scale
  • 2 pounds russet potatoes (about 4 medium), peeled and cut into 1-inch cubes
  • Kosher salt (for boiling water)
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh chives, finely chopped (optional)

Instructions

  1. Place the potato cubes in a large pot and add enough cold water to cover them by 1 inch. Add 1 tablespoon kosher salt. Bring to a boil over high heat, then reduce the heat to medium-low and simmer uncovered for 15 to 20 minutes, until the potatoes are fork-tender and a knife slides in without resistance. Do not overcook or they will become waterlogged.
  2. While the potatoes cook, combine the milk, cream, butter, and minced garlic in a small saucepan. Warm over low heat until the butter melts and the mixture is hot but not boiling, about 5 minutes. Keep warm.
  3. Drain the potatoes in a colander and return them to the dry pot set over low heat. Cook for 1 to 2 minutes, shaking the pot, to evaporate excess moisture—this ensures fluffy, not gluey, mashed potatoes.
  4. Pass the potatoes through a ricer or food mill into a large bowl, or mash with a potato masher until smooth. Avoid using a food processor or electric mixer, which can make the potatoes gummy.
  5. Gradually pour the warm milk mixture into the mashed potatoes, stirring with a wooden spoon until fully incorporated. The potatoes should be creamy and smooth.
  6. Stir in the grated Parmesan, black pepper, and additional salt to taste. Mix gently until the cheese melts and everything is well combined. Taste and adjust seasoning.
  7. Transfer to a warm serving bowl and garnish with chopped chives, if desired. Serve immediately.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as the texture may become grainy. Reheating: Reheat in a saucepan over low heat, stirring frequently, or in the microwave at 50% power in 1-minute intervals, adding a splash of milk or cream to loosen. Do not boil.
