Ina Garten Peach Almond Torte recipe

Ina Garten’s Peach Almond Torte is a single-layer cake featuring fresh peach slices nestled into a rich almond-flavored batter. The cake is baked until golden and topped with sliced almonds for added texture and flavor.

Ingredients

For the torte:

  • All-purpose flour: 1 cup.
  • Baking powder: 1 teaspoon.
  • Salt: 1/4 teaspoon.
  • Unsalted butter: 1/2 cup (1 stick), softened.
  • Granulated sugar: 3/4 cup.
  • Eggs: 2 large.
  • Vanilla extract: 1 teaspoon.
  • Almond extract: 1/2 teaspoon.
  • Fresh peaches: 2 large, peeled, pitted, and thinly sliced.

For the topping:

  • Sliced almonds: 1/4 cup.
  • Powdered sugar: For dusting (optional).

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2: Mix the dry ingredients

  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3: Cream the butter and sugar

  • In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3 minutes.

Step 4: Add eggs and extracts

  • Beat in the eggs one at a time, followed by the vanilla and almond extracts.

Step 5: Combine wet and dry ingredients

  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.

Step 6: Assemble the torte

  • Spread the batter evenly into the prepared cake pan. Arrange the peach slices in a circular pattern on top of the batter. Sprinkle the sliced almonds evenly over the peaches.

Step 7: Bake the torte

  • Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

Step 8: Cool and serve

  • Allow the torte to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
