Ina Garten Peach Blueberry Crumble

Ina Garten’s Peach Blueberry Crumble is a classic fruit dessert made with fresh peaches and blueberries, tossed in a light sugar mixture, and topped with a buttery, crumbly topping. The result is a combination of soft, sweet fruit and a crisp, golden topping that’s both comforting and irresistible.

Ingredients

For the Filling:

  • Peaches: 6 cups, peeled, pitted, and sliced (about 6-8 peaches).
  • Blueberries: 2 cups, fresh or frozen (if frozen, do not thaw).
  • Granulated sugar: 1/4 cup.
  • Brown sugar: 1/4 cup.
  • All-purpose flour: 2 tablespoons.
  • Lemon juice: 1 tablespoon, freshly squeezed.
  • Lemon zest: 1 teaspoon.

For the Crumble Topping:

  • All-purpose flour: 1 cup.
  • Granulated sugar: 1/4 cup.
  • Brown sugar: 1/4 cup.
  • Oats: 1/2 cup, old-fashioned.
  • Unsalted butter: 1/2 cup (1 stick), cold and diced.
  • Salt: 1/4 teaspoon.
  • Cinnamon (optional): 1/2 teaspoon.

Instructions

Step 1: Prepare the Filling

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sliced peaches, blueberries, granulated sugar, brown sugar, flour, lemon juice, and lemon zest. Toss gently to coat the fruit evenly.
  • Transfer the fruit mixture to a greased 9×13-inch baking dish.

Step 2: Make the Crumble Topping

  • In another mixing bowl, combine flour, granulated sugar, brown sugar, oats, salt, and cinnamon (if using).
  • Add the diced cold butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Step 3: Assemble the Crumble

  • Sprinkle the crumble topping evenly over the fruit mixture in the baking dish.

Step 4: Bake the Crumble

  • Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the fruit is bubbling.

Step 5: Serve Warm

  • Allow the crumble to cool slightly before serving. Serve warm with vanilla ice cream or whipped cream for an extra treat.
