Ina Garten Plum Crumble

Plum crumble is a baked fruit dessert featuring tender, caramelized plums beneath a crunchy oat and brown sugar topping. Unlike a pie, a crumble has no crust, making it simpler yet equally delicious. Ina Garten’s version enhances the fruit’s natural sweetness with a hint of cinnamon and lemon juice.

Ingredients

Scale

For the Plum Filling:

  • 68 ripe plums, pitted and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

For the Crumble Topping:

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cut into small cubes

Instructions

Step 1: Preheat the Oven

  • Set the temperature: Preheat your oven to 375°F (190°C).
  • Prepare the baking dish: Lightly grease a 9-inch baking dish or pie dish.

Step 2: Prepare the Plum Filling

  • Combine ingredients: In a large bowl, toss the sliced plums with sugar, lemon juice, cornstarch, cinnamon, and vanilla extract.
  • Transfer to baking dish: Spread the mixture evenly in the prepared dish.

Step 3: Make the Crumble Topping

  • Mix the dry ingredients: In another bowl, whisk together flour, oats, brown sugar, salt, and cinnamon.
  • Cut in the butter: Using a pastry cutter or your fingers, mix in the cold butter until the mixture resembles coarse crumbs.

Step 4: Assemble and Bake

  • Sprinkle the crumble: Evenly spread the topping over the plum mixture.
  • Bake until golden: Bake for 35–40 minutes, or until the topping is golden brown and the plums are bubbling.

Step 5: Serve

  • Let it cool slightly: Allow the crumble to rest for 10 minutes before serving.
  • Enjoy warm: Serve as is or with a scoop of vanilla ice cream.
