Ina Garten Scalloped Tomatoes Recipe

Ina Garten Scalloped Tomatoes

Scalloped Tomatoes is a baked dish made with fresh, juicy tomatoes, toasted bread, and a blend of garlic, basil, and Parmesan cheese. The tomatoes release their juices as they bake, creating a rich, flavorful sauce, while the crispy bread cubes add texture.

Ingredients

Scale
  • 3 tablespoons olive oil
  • 2 cups bread cubes (use crusty bread like ciabatta or sourdough)
  • 2 pounds ripe tomatoes, diced (or cherry tomatoes halved)
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon sugar
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted

Instructions

Step 1: Preheat the Oven

  • Set the temperature: Preheat your oven to 375°F (190°C).

Step 2: Toast the Bread Cubes

  • Heat the oil: In a large skillet, heat the olive oil over medium heat.
  • Toast the bread: Add the bread cubes and stir frequently until golden and crisp, about 5 minutes. Remove from heat.

Step 3: Prepare the Tomato Mixture

  • Combine the ingredients: In a large bowl, mix the diced tomatoes, garlic, salt, black pepper, sugar, and basil.
  • Add toasted bread: Stir in the toasted bread cubes and mix well.

Step 4: Assemble and Bake

  • Transfer to a baking dish: Pour the tomato mixture into a greased baking dish.
  • Add cheese and butter: Sprinkle grated Parmesan cheese evenly over the top and drizzle with melted butter.
  • Bake until bubbly: Bake for 35–40 minutes, until the top is golden and crispy.

Step 5: Serve

  • Let it cool slightly: Allow the dish to rest for 5 minutes before serving.
  • Enjoy warm: Serve as a side dish or with crusty bread.
