  • 8 oz sharp yellow cheddar cheese, grated (about 2 cups)
  • 4 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 (4-oz) jar diced pimentos, drained

Instructions

  1. Grate the sharp cheddar cheese on the large holes of a box grater into a large bowl. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a hand mixer, beat the softened cream cheese, mayonnaise, garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper on medium speed until smooth and fully combined, about 1 minute.
  3. Add the grated cheddar and drained pimentos to the cream cheese mixture. Mix on low speed just until incorporated, about 30 seconds. Avoid overmixing, which can make the spread oily.
  4. Scrape down the sides of the bowl with a rubber spatula and fold gently to ensure even distribution of pimentos and cheese.
  5. Transfer the pimento cheese to a serving bowl, cover, and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, let it sit at room temperature for 10 minutes to soften slightly for easier spreading.
  7. Serve with crackers, celery sticks, or as a sandwich filling.

Notes

Store leftover pimento cheese in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze in a freezer-safe container for up to 2 months; thaw overnight in the refrigerator and stir well before serving. To reheat, microwave in 15-second intervals until softened, or let sit at room temperature. Do not boil or overheat, as it can separate.
