Instructions

  1. In the bowl of a food processor fitted with the metal blade, combine the crumbled feta, softened cream cheese, olive oil, lemon juice, grated garlic, kosher salt, and black pepper.
  2. Process the mixture for 1 minute, then stop and scrape down the sides of the bowl with a rubber spatula. This ensures even blending and prevents lumps.
  3. Continue processing for another 2 to 3 minutes, until the mixture is completely smooth, creamy, and lightened in texture. The feta should no longer be grainy; if it still feels gritty, process for another minute.
  4. Taste and adjust seasoning: add more lemon juice for brightness or salt if needed. Remember that feta is already salty, so add salt cautiously.
  5. Transfer the whipped feta to a shallow serving bowl and use the back of a spoon to create a swoosh or swirl. This helps the olive oil pool attractively.
  6. Drizzle with a little extra-virgin olive oil and sprinkle with fresh dill and red pepper flakes, if using. Serve immediately with pita chips, crostini, or fresh vegetable sticks.
  7. If not serving immediately, cover and refrigerate for up to 3 days. Bring to room temperature for 15 minutes before serving and stir to recombine, as it may thicken in the fridge.

Notes

Storage: Store leftover whipped feta in an airtight container in the refrigerator for up to 3 days. Freezing is not recommended as the texture becomes grainy upon thawing. Reheating: This dip is served cold or at room temperature. To revive after refrigeration, let it sit at room temperature for 15 minutes and stir well; if too thick, blend in a teaspoon of olive oil or lemon juice. Variations: Add 1/2 teaspoon of honey for a sweet-savory twist, or substitute herbs like basil or mint. For a smoother dip, use a high-powered blender, but be careful not to overheat. Serve with warm pita or as a spread for sandwiches.
