Ina Garten’s Roasted Sweet Potatoes with Maple and Rosemary

Ina Garten's Roasted Sweet Potatoes with Maple and Rosemary - recipe card

Ina Garten’s roasted sweet potatoes are caramelized and tender, with a sweet and savory glaze from pure maple syrup and fresh rosemary. This simple side dish is elegant enough for Thanksgiving but easy enough for a weeknight.

Ingredients

Scale
  • 2 pounds sweet potatoes (about 3 medium), peeled and cut into 1-inch cubes
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons pure maple syrup
  • 1 tablespoon fresh rosemary leaves, finely chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cinnamon
  • Optional: 1/4 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the sweet potato cubes, olive oil, maple syrup, rosemary, salt, pepper, cinnamon, and smoked paprika if using. Toss well to coat evenly.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet, making sure they are not crowded. Use two baking sheets if necessary.
  4. Roast for 25 to 35 minutes, stirring once halfway through, until the sweet potatoes are tender and caramelized on the edges. They should be easily pierced with a fork.
  5. Remove from the oven and let cool for 5 minutes before serving. Garnish with additional fresh rosemary if desired.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheating: Reheat in a 350°F (177°C) oven for 10 minutes, or in the microwave on high for 1-2 minutes until heated through. Freezing: Not recommended, as the texture becomes mushy upon thawing.
