Maple Roasted Sweet Potatoes - recipe card

Caramelized sweet potato cubes with a glossy maple glaze, seasoned with cinnamon and smoked paprika. The result is crispy edges, tender centers, and a perfect balance of sweet and savory. A versatile side dish for any meal.

Ingredients

Scale
  • 2 lbs sweet potatoes (about 3 medium), peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/4 cup pure maple syrup
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp ground cinnamon
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder

Instructions

  1. Preheat oven to 425°F (218°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a large bowl, toss sweet potato cubes with olive oil, kosher salt, black pepper, cinnamon, smoked paprika, and garlic powder until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet, making sure they are not overcrowded. Use two baking sheets if necessary.
  4. Roast for 15 minutes. Remove from oven and drizzle with maple syrup, then toss gently with a spatula to coat.
  5. Return to oven and continue roasting for another 15-20 minutes, until sweet potatoes are tender and caramelized, turning once halfway through.
  6. The sweet potatoes are done when they are easily pierced with a fork and have golden brown edges. Total roasting time should be about 30-35 minutes.
  7. Remove from oven and let cool for 5 minutes before serving. The glaze will thicken slightly as it cools.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Freezing is not recommended as the texture becomes mushy upon thawing. Reheating: Reheat in a 350°F (177°C) oven for 10 minutes, or in the microwave for 1-2 minutes until heated through. For best results, re-crisp in the oven.
