The creamy, tangy yolk filling is spiced with mustard and a whisper of paprika, then piped into ridged pumpkin shapes and finished with a fresh chive stem for a playful, elegant presentation.

  • 1/4 cup full-fat mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp white wine vinegar
  • 1/4 tsp fine sea salt, plus more for boiling water
  • 1/8 tsp freshly ground black pepper
  • 1/8 tsp sweet paprika, plus extra for dusting
  • 1/8 tsp ground turmeric, for natural orange coloring
  • 6 fresh chives, cut into 1-inch pieces for stems
  • 1 small carrot, peeled and cut into 12 tiny triangular slivers for pumpkin leaves

Instructions

  1. Place the eggs in a single layer in a medium saucepan and cover with cold water by 1 inch. Add 1 teaspoon of fine sea salt to the water to help prevent cracking and make any potential peeling easier.
  2. Set the saucepan over medium-high heat and bring the water to a rolling boil. Once boiling, immediately remove the pan from the heat, cover with a tight-fitting lid, and let the eggs stand for 12 minutes for perfectly set yolks with no gray ring.
  3. While the eggs steep, fill a large bowl halfway with ice water. After the 12-minute rest, use a slotted spoon to transfer the eggs directly into the ice bath and let them chill for at least 5 minutes until completely cool to the touch.
  4. Peel the eggs carefully under a thin stream of cool running water, starting at the wider end where the air pocket sits, and gently work your thumb under the membrane to release the shell without tearing the whites.
  5. Using a sharp paring knife, slice each peeled egg in half lengthwise. Gently press the back of each half to pop out the yolk, and place all yolks in a medium mixing bowl. Arrange the egg white halves cut-side up on a paper-towel-lined plate to absorb excess moisture.
  6. Mash the yolks with a fork until they form a fine, crumbly powder. Add the mayonnaise, Dijon mustard, white wine vinegar, salt, black pepper, paprika, and turmeric, then whisk vigorously until the mixture is completely smooth and uniform in color.
  7. Taste the filling and adjust seasoning with additional salt, pepper, or mustard to your preference. The filling should be creamy but pipeable—if it feels too stiff, whisk in an extra teaspoon of mayonnaise.
  8. Transfer the filling to a piping bag fitted with a small star tip. If you don’t have a piping bag, fill a zip-top bag and snip a very small corner, though the star tip is what creates the distinct pumpkin ridges.
  9. Hold the piping bag perpendicular to each egg white half and pipe the filling in a tall spiral mound, starting from the outer edge and working upward and inward to create a domed pumpkin shape with visible ridges from the star tip.
  10. Place the piped egg halves on a serving platter. Insert one chive piece vertically into the top center of each pumpkin as the stem, then tuck two tiny carrot triangles at the base of the stem on opposite sides to mimic leaves.
  11. Lightly dust the tops of the pumpkins with a pinch of extra sweet paprika for warmth and depth of color. Let the finished eggs rest at room temperature for 5 minutes to allow the piped shape to set slightly.
  12. Serve immediately, or refrigerate for up to 4 hours before serving for the freshest presentation.

Notes

Store leftover pumpkin-shaped deviled eggs in an airtight container in the refrigerator for up to 2 days. Place a sheet of parchment paper gently over the top to protect the piped ridges. Do not freeze, as the egg white texture becomes rubbery upon thawing. For make-ahead preparation, boil and peel the eggs up to one day in advance and store the whites and yolks separately in the fridge, then prepare the filling and pipe just before serving.
