  • 1/2 cup roasted red peppers (jarred or freshly roasted)
  • 1/3 cup mayonnaise
  • 1 garlic clove, minced
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Spicy Red Pepper Aioli

  • Blend the ingredients: In a blender or food processor, combine the roasted red peppers, mayonnaise, garlic, lemon juice, and cayenne pepper. Blend until smooth.
  • Season: Taste and add salt and pepper as needed. Transfer to a small bowl and refrigerate until ready to serve.

Step 2: Prepare the Salmon

  • Pat the salmon dry: Use paper towels to remove any excess moisture from the salmon fillets.
  • Season: Sprinkle both sides of the salmon with kosher salt and freshly ground black pepper.

Step 3: Sear the Salmon

  • Heat the oil: In a large skillet, heat the olive oil over medium-high heat until shimmering.
  • Cook the salmon: Place the salmon fillets skin-side down (if using skin-on) and sear for 4–5 minutes, without moving, until the skin is crispy. Flip the fillets and cook for another 2–3 minutes, or until the salmon is cooked to your preferred doneness.
