Instructions

  1. Place the cold eggs in a single layer in a medium saucepan and cover with cold water by 1 inch. Set the pan over high heat and bring the water to a rolling boil, watching for large vigorous bubbles across the entire surface, about 8 to 10 minutes.
  2. As soon as the water reaches a full rolling boil, remove the pan from the heat, cover tightly with a lid, and let the eggs sit in the hot water for exactly 12 minutes. This gentle carryover cooking yields fully set yolks with a tender, not rubbery, white and prevents the greenish-gray ring from forming around the yolk.
  3. While the eggs sit, fill a medium mixing bowl halfway with ice water. Using a slotted spoon, transfer the hot eggs directly into the ice bath and let them chill for at least 5 minutes, or until completely cold to the touch. The ice bath halts the cooking process immediately and helps the shell membrane contract for easier peeling.
  4. Gently tap each egg on a flat work surface to crack the shell all over, then roll it lightly between your palms to loosen the shell. Peel under a thin stream of cold running water, starting at the wider end where the air pocket sits, to help the shell slip off cleanly without tearing the whites.
  5. Pat the peeled eggs dry with a clean kitchen towel or paper towel. Slice each egg in half lengthwise using a sharp chef’s knife, wiping the blade clean between cuts for neat edges. Carefully remove the yolks and transfer them to a small mixing bowl, then set the white halves cut-side up on a serving platter.
  6. Mash the yolks with a fork until they form fine, uniform crumbs with no large lumps. Add the mayonnaise, Dijon mustard, apple cider vinegar, kosher salt, black pepper, and smoked paprika. Stir vigorously with the fork, then switch to a small whisk and beat until the mixture is completely smooth, creamy, and light in texture, about 1 to 2 minutes.   7. Fit a piping bag with a star tip, or use a sturdy zip-top plastic bag with one corner snipped off. Spoon the yolk mixture into the bag, pressing it down toward the tip to remove large air pockets. Holding the bag at a 45-degree angle about 1 inch above a white half, pipe the filling in a swirling motion, starting at the outer edge and working toward the center to create a peaked, decorative mound. Repeat with the remaining white halves.
  8. Sprinkle each filled egg lightly with smoked paprika, then top with a small pinch of the minced fresh chives. For a Thanksgiving presentation, arrange the deviled eggs on a platter garnished with fresh herb sprigs or whole chives. Serve immediately, or refrigerate for up to 2 hours before serving to keep the filling firm and cold.
