- On a lightly floured surface, roll the puff pastry into a 10-by-12-inch rectangle and brush it with the egg wash.

- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Lift the polenta out of the pan, cut it into 36 squares and arrange them on the baking sheet. Brush with the olive oil.
- Bake for 20 to 25 minutes, flipping halfway through, until golden and crisp at the edges.
